Vanilla Pound Cake

Ingredients
Nonstick baking spray with flour
1 cup (2 sticks) butter, softened
3 cups sugar
1 vanilla bean, split lengthwise and seeds scraped
6 large eggs, separated
3 cups cake flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup sour cream
1/2 cup sliced almonds
Black Cherry Sauce, recipe follows


Directions
Preheat the oven to 325 degrees F. Spray a 12 to 15-cup fluted pan with nonstick baking spray with flour.


In a large bowl, beat the butter and sugar at medium speed with an electric mixer until fluffy. Add the scraped vanilla bean seeds, beating until combined. Add the egg yolks, 1 at a time, beating well after each addition.


In a medium bowl, sift together the flour, baking soda, and salt. Gradually add to the butter mixture, alternately with the sour cream, beginning and ending with the flour mixture. Beat the egg whites at high speed with an electric mixer until foamy. Gently fold into the butter mixture. Spoon into the prepared pan. Sprinkle the almonds evenly over the top of the cake. Bake until a wooden pick inserted in the center comes out clean, 1 hour to 1 hour and 15 minutes. Let cool in the pan for 10 minutes. Remove from the pan, and cool completely on a wire rack. Serve with Black Cherry Sauce, if desired.


Black Cherry Sauce:
2 tablespoons sugar
1 tablespoon cornstarch
1 teaspoon lime zest
1/2 cup black cherry juice
1 (12-ounce) package frozen dark sweet cherries
In a medium saucepan, combine the sugar, cornstarch, and lime zest. Stir in the black cherry juice, whisking until smooth. Add the cherries. Bring to a boil over medium heat, stirring frequently, until thickened, about 1 minute.. Remove from the heat and let cool.

Sweet Black Cherry Crisp

Ingredients
1/2 cup granulated sugar
1/4 cup, plus 3 tablespoons all-purpose flour
6 cups pitted frozen cherries, thawed
1 cup quick-cooking oats
1/2 cup firmly packed brown sugar
1/4 cup butter, softened
1/2 cup sliced almonds


Directions
Preheat the oven to 350 degrees F. Lightly grease a 13 by 9-inch baking pan.


In a large bowl, combine the sugar and 3 tablespoons flour. Add the cherries, tossing gently to coat. Spoon the mixture into the prepared pan.


In a medium bowl, combine the oats, brown sugar, and remaining 1/4 cup flour. Using a pastry blender, cut in the butter until the mixture is crumbly. Stir in the almonds. Sprinkle evenly over the cherry mixture. Bake until hot and bubbly and the topping is golden brown, about 30 minutes. Let stand for 15 minutes before serving.

Cherry-Chocolate Coffee Float

Ingredients

  • 3 scoops chocolate chip ice cream
  • 1/2 cup hot espresso
  • 1 tablespoon cherry-flavored syrup
  • Whipped cream, maraschino cherry, shaved chocolate, for garnish

Directions

Add the ice cream to a serving glass or mug. Slowly pour the hot espresso over ice cream and drizzle with the cherry syrup. Garnish with whipped cream, a cherry and shaved chocolate. Serve immediately.

Apple Cinnamon Oatmeal Casserole




Ingredients:

2 cups half-and-half or milk
1/4 cup packed brown sugar
1 tablespoon butter
1/2 teaspoon salt
1 cup quick-cooking oats
2 tablespoons ground cinnamon
1 cup peeled chopped apple
1/2 cup chopped dried apricots
1/4 cup chopped pecans
1/2 cup raisins
2 tablespoons dried cherries
Cinnamon Oat Nut Topping:
1/4 cup packed brown sugar
1 tablespoon ground cinnamon
2 tablespoons chopped pecans
3 tablespoons oats
Butter, to dot the top


Directions:

Preheat the oven to 350 degrees F. Grease a medium casserole dish.
Combine the half-and-half or milk, brown sugar, butter and salt in a heavy saucepan over medium heat. Simmer until the butter is melted and the mixture is smooth. Remove from heat. Add the oats to a casserole dish and stir in the milk mixture, cinnamon, apples, apricots, pecans, raisins and cherries. Cook’s Note: If the casserole seems dry, add milk to moisten.
Top with Cinnamon Oat Nut Topping and dot with butter. Bake for 20 to 30 minutes. Remove from the oven and serve.
Cinnamon Oat Nut Topping:
Combine all ingredients in a small bowl until well combined
